Let's Get This (Paleo) Bread

When I first decided to go keto, one of the foods I missed the most was definitely bread. I missed the convenience of making a sandwich, comfort foods like garlic bread, and of course avocado toast (I am a millennial, after all). I was always wary of trying keto bread recipes, as they usually contained ingredients that didn’t make me feel great, tasted very “eggy”, and were overall pretty disappointing taste-wise. But then I encountered Lilsipper’s Erewhon Paleo Bread Re-Make. This recipe had rave reviews on Instagram so I decided to give it a try. Bethany did an amazing job of recreating this recipe using easy ingredients that you probably have on hand, and the bread comes together so quickly! Needless to say, I’m hooked! I only made one tweak to her recipe to make it more keto friendly, but I highly recommend checking out her blog for lots of paleo, keto, gut-friendly recipes! She’s a total rockstar. Here is the recipe I followed for the bread:

Ingredients:
1 tsp baking soda
1 Tbsp apple cider vinegar
5 eggs
2 Tbsp coconut flour
¼ cup flaxmeal
1 tsp sea salt
¾ cup almond butter
1½ Tbsp Lakanto Monkfruit Sweetened Maple Flavored Syrup (Sugar Free)

Directions:
1. Mix all ingredients in a stand or electric mixer until well combined.
2. Pour batter into a standard bread loaf pan lined with parchment paper and bake at 350 for about 30 minutes or until a toothpick comes out clean.


I love toasting this bread and topping it with smashed avocado, feta, sun-dried tomatoes, fresh basil, garlic powder, pink salt, and crushed red pepper flakes.

I also love topping it with organic baby spinach and tuna salad. For the tuna salad I mix together:

1/2 can Safecatch elite wild tuna (less mercury than albacore and sustainably fished)
1 Tbsp Primal Kitchen Chipotle Lime Mayo (made with avocado oil)
1 tsp whole grain mustard (I love the kind from Trader Joe’s)
Juice of 1/2 a lime or lemon
Dash of garlic powder
Dash of pink salt
Dash of pepper
